Only one... 
I voted for a shotgun...flat out the most versatile piece you can own.
You can hunt large and small game with it just by changing the load you're using.
Works well for dispatching predators too, the two legged and four legged varities...

.22 RF. Cheap, highly reliable, several rounds of .22 ammo weigh what one .223 round weighs, .22 RF will kill anything in the Americas with repeated shots, .22 RF is low noise, little recoil, one shot kills on small game without overdoing it. Also there's the least politics around them. No black rifle phobia. .22 RF is the all American gun, here to stay.

Thanks Frank. I'm Mr. Star Garnet. Of course there are other considerations in the selection of an all-around one gun. If you're going to hunt large game the hunting regulations of most if not all states require larger calibers, for example, in Tennessee the minimum deer hunting caliber is .243, even though the high power .22s such as .22-250 will kill a deer just fine. I was just considering what I, a nonhunter, would choose for my only gun on the homestead. If you're going to be hunting fowl then certainly you have to have a fowling piece (shotgun). It's good for small game like rabbits and squirrels, too, and loaded with buckshot or slugs will take larger game at close range. I think in South Carolina shotguns are required for large game because of population density. Even a 12g slug fired at 50 degrees will only go about 600 yards or so, about a third of a mile, while a .243 fired up in the air may fall five miles away. Of course you aren't supposed to aim a rifle up in the air, not even a .22RF, which has a danger range of up to 2 miles. Miss that squirrel up in the tree and you may hit someone or something as much as 2 miles away. If I didn't have to tote a gun and very much ammunition very far I just might stick with a shotgun. I prefer a .22, hon, they don't hurt my shoulders! Ammo is cheap. Good for getting a stew rabbit. I don't hunt deer anymore.
